Do you have dull knives in your

Dull knives are
dangerous! You may not realize it but there are a far
greater number of injuries caused by dull knives that by sharp ones! It
may go against logical thinking…
“A dull knife will make it harder to cut
myself.”
Not true. There
are a number of studies that show the same result: using
a dull knife requires applying greater force when cutting food items and therefore increase the risk of
injury.
In contrast, using a sharp knife
requires little strength greatly increasing safety and reducing the likelihood of hurting yourself in the
event of a slip. That is why it is critically important for you
to keep all your knives properly conditioned and sharpened.
There are number of ways to
condition and properly maintain the sharpness of your cutlery. In
addition to the better-known sharpening methods that include sharpening stones, steels and ‘pull-through’
versions (and heaven forbid, I hope you are NOT using that grinder found on the back of your can opener!!!),
there has been recent and significant advances for the home cook in electric knife
sharpeners.
Culinary experts, gourmets and
top chefs all acknowledge the value of a fine cutting edge for proper and elegant food
preparation. This is why they regularly sharpen their knives
and recommend that home cooks and amateur chefs do the same. At a
minimum, cutlery should be conditioned and maintained monthly. That
may seem like a lot of work…but once your knives are properly conditioned, they will be easy to maintain and keep razor-sharp in just a minute or two or
reconditioning.
So, just what is
knife conditioning?
Conditioning is the process of
creating the proper cutting angle on both sides of your knife’s edge. Most
electric knife sharpeners provide a conditioning wheel that will precisely abrade the knife edge to the
proper angle. Make sure you select a model that can condition
a knife before sharpening it.
Once the conditioning process is
complete, the honing (steel) process is done by repeated pulling your knife gently along two or more
diamond-embedded sharpening surfaces until a ‘burr’ is created. Once
this burr appears, you know your knife’s surface is properly
prepared. The final step (strop) is to remove the burr
using the same process as before but using a final sharpening surface that gently removes the burr, leaving
you with a razor sharp knife.
Remember, a sharp knife is a
safe knife because you expect it to be sharp and respect it! And it becomes a joy to sharpen your knives when using electric knife sharpeners to do the
job.
